The problem

In an unnamed kindergarten in the city district of Liptovský Mikuláš, with the consent of the parents of the children, the pupils of our school of the Dairy Department conducted a survey of dairy food served as snacks. The following result emerged from the survey. One type of yoghurt made from skimmed milk was not thickened to the appropriate consistency. Yoghurts of this consistency are thickened in the production process with starches or gelatine, are low in fat, but at the same time carry energy-dense starches that are absent from the yoghurt. This is where the problem arises , that the carbohydrate content is significantly increased.

The solution we used

Pupils of the Dairy - cheese maker department decided to join the cooperation of pupils of the Agromechanizer department and together they prepared a field for sowing Tiger nut. The nutritional values of Tiger nut have beneficial effects on the digestive tract. Tiger nut contains alkaloids, glycosides, saponins, flavonoids - cyperone, caryophyllen, cyperollen, patchoulen, cyperol, from carbohydrates glucose and fructose, pectin, proteins, from fatty acids, e.g. palmitic and linoleic acid, vitamin C, biotin, magnesium, calcium or potassium. It is also a source of rutin. Important information is that Shahor reduces fat and helps fight obesity and it is a natural nutritious food substitute for refined sugar.

Implementation

Pupils of the Dairy Department carried out a survey on the amount of refined sugar in dairy products offered as snacks and lunch in an unnamed kindergarten.

Subsequently, together with the pupils of the Agro-mechaniser-repairer department, they prepared the land and sowed Tiger Walnut.

After growing and processing the Tiger Nut as a subsistence food, the pupils plan to provide its fruits as a food substitute for refined sugar in the kindergarten where the survey took place.
